Andalusian Gazpacho
Chilled raw tomato soup with cucumber, sherry vinegar and fruity olive oil.
Ingredients
- 400g chicken thigh
- 1 tbsp smoked paprika
- 1 tbsp soy sauce
- 2 tsp brown sugar
- 1 thumb ginger, grated
- 2 cloves garlic, minced
- juice of 1 lime
- 1 tbsp neutral oil
Cook's note
This recipe serves 2-4 and scales easily. All timing assumes room-temperature ingredients. Prep mise en place before you start cooking - it makes everything smoother.
Method

Mix dry ingredients in one bowl and wet in another.

Fold wet into dry until just combined; do not overmix.

Rest the batter for 10 minutes while you heat the pan.

Cook in batches over medium heat until bubbles form and edges set.

Flip once and finish another minute. Serve warm.
